An oyster hall should feel like a well-run machine you are happy to be inside. The long marble counter is the whole restaurant: forty stools, a brass foot rail, ice mounded in view and a hand-painted number board because a screen would have ruined everything.

White subway tile bounces the light around; the warmth comes from the brass, the bentwood and the globes overhead, so the room reads crisp at noon and golden by nine.

Everything wipes down. The materials were chosen with the closing crew, not just the opening party.
